Homemade Mini Pumpkin Bites Muffin Recipe
Homemade Mini Pumpkin Bites Muffin Recipe may be my go to recipe for all Fall at this rate. I love that it is an easy recipe to make, tastes great and allows us to have things we can eat on the run. I love Fall and pumpkin so these are a fabulous way to enjoy pumpkin muffins even on a weekday! I usually do all of my baking on Saturday then we have baked goods throughout the week to snack on or eat for breakfast.
Ingredients:
- 3 cups all-purpose flour
- 3 cups white sugar
- 2 teaspoon baking soda
- ½ teaspoon baking powder
- 1 teaspoon kosher salt
- 1 1/2 cups canned pumpkin
- 1 cup vegetable oil
- 4 eggs
- 2/3 cup water
- 1 tablespoon pure vanilla extract
- 1 teaspoon ground cloves
- 1 teaspoon allspice
- 1/2 teaspoon pumpkin pie spice
- ½ bag semi-sweet chocolate chips
- candy Corns
- Chocolate Icing
Directions:
- Preheat oven to 350 degrees
- In a large bowl combine the flour, sugar, baking soda, baking powder and salt. Set aside.
- In a stand mixer fitted with the whisk attachment, combine the pumpkin, oil, eggs, vanilla extract, water and spices on medium speed. Slowly add the dry ingredients and mix on low until everything is combined. Fold in chocolate chips.
- Spoon batter mini muffin pans. Bake for about 18-20 minutes, until a toothpick is inserted in the middle and comes out clean. Remove from oven and let the Chocolate Chip Pumpkin Muffins cool for at least 30 minutes before removing and frosting and adding candy corn.
