After rain comes a rainbow and after a great brunch, you need some delicious dessert! Here are five ideas for some sweets you can easily bake yourself! Make your next relaxed brunch truly memorable with these recipes.
All of the selected desserts can be prepared the night before and still be fresh for the next day. However, if you want to make a day out of your brunch, you could prepare them the very same day.
1. Coconut Cake
A soft, moist coconut cake takes a while to make, but the results are so worth it! You need butter, sugar, eggs, coconut milk, baking powder, and self-rising flour, plus some raw coconut for topping.
Mix the flour with the baking powder and finely grated coconut flakes in a bowl, then whip the butter with the sugar. In a different bowl, whisk the eggs with the milk and slowly add the mixture on top of the sweet buttercream. Add the dry ingredients mix, and pour into a round pan.

2. Chocolate Cake

3. Lemon Drizzle Cake
This zesty cake is a great addition to any summer brunch. Making it was never easier, with these simple ingredients! All you need is a cup for measure.
Add a cup of caster sugar to a stick of butter and beat them together. Add four eggs one by one, followed by a cup of self-rising flour and a teaspoon of lemon zest. Butter the cake pan and pour in the mixture.
Bake at medium-low temperature for an hour, then while the cake is still warm pour a syrup made of four tablespoons of sugar and a tablespoon of lemon juice, plus some water on top. Let it soak and cool, then serve!
4. Pancakes
More exactly, pancakes with ricotta, honey, and berries. This is one of my favorite desserts to have after brunch. The name is recipe enough, but there are a few tricks to share.
First, make the pancakes fluffy and buttery, and drown them in honey as soon as they are out of the pan. Second, for an extra touch of special, whisk the ricotta for a minute before serving to make it fluffy and soft. Third, fruits are also important. Add fresh berries, and don’t shy away from using seasonal fruit as well. Go for sweet and juicy fruits. Serve fresh, with extra honey on the side.
5. Fruit Salad
Another self-explanatory dessert. This one is so light and always fresh, no matter how many times you make it. Throw together the fruits you have in a bowl and mix them.
It’s best if you make the salad the night before to allow the flavors to blend. Whip some cream and serve that on the side or on top. Keep an eye on the textures of the fruit, the size of the pieces, and the overall flavor, as well as on how moist they are.
