Apple Spice Muffins Recipe
Fall is around the corner and with fall comes lots of apples. Each year we go apple picking as a family and then we put can the apples for the following year. We have grown up doing this for as long as I can remember so there is always a fun filled weekend of apple preparing the first of September. Last year it ended up being Labor Day weekend but this year it is going to be this next weekend.
We are making applesauce, apple pie filling and who knows what else as the day progresses. We save lots of money each year by putting up fresh fruits for the rest of the year. As well as being able to control what preservatives are added to the products it is a win, win for us. But one thing is for sure, there is nothing better than the first apple spice muffins!!
Apple Spice Muffins
3/4 cup buttermilk
1/4 cup canola oil
1 teaspoon vanilla
1 large egg
2 cups flour
1/4 cup sugar
1/4 cup brown sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup finely chopped apple
Topping
1 tablespoon sugar
1/4 teaspoon ground cinnamon
Directions
Preheat oven to 400F. Line muffin tin with cupcake liners. If you’re using no-fade liners, you will need to spray them with non-stick cooking spray so the muffins don’t stick.
In a large bowl, combine buttermilk, oil, vanilla, and egg with a whisk. Add in flour, sugars, baking powder, salt, and cinnamon. Add in apple.
Pour batter into muffin liners. Combine sugar and cinnamon for topping, and sprinkle over the top of the batter.
Bake for about 25 minutes or until toothpick inserted comes out clean. These are delicious, and are great warm or cold!
