Clover Bars are Perfect for St. Patrick’s Day

If you have been following me for very long at all you know that our daughter is a “St. Patrick’s Day” baby. While she is no longer a baby she will of course forever be my baby and we had to celebrate each birthday with special foods. You can learn more about St Patrick’s Day at sites such as Voice Online. When I had her on St. Patrick’s Day almost 19 years ago I was afraid she would hate being born on that day, but she has always enjoyed and felt special because of it being a holiday.

Fast forward to this year and she is now a freshman in college living on her “own” and growing into a responsible adult. While living in an Empty Nest is tough some days, it is also rewarding to see that we did an okay job raising her. After all that is what it is all about as parents right? We fake it until we make it, and then keep faking some more. So this year I bought a box of “Lucky Charms®” and made some yummy Clover Bars. While I’m not working with the “brand” we enjoyed this delicious treat enough that they are slated to be made again.

Ingredients:

6 cups limited edition green clover lucky charms
10 oz bag miniature marshmallows
3 tablespoons softened butter

Clover Bars

Directions
1. Grease a 8 x 8 baking pan with a nonstick cooking spray.
2. Large mixing bowl, heat your marshmallows and butter for 1-2 minutes or until the marshmallows get puffy.
3. Stir your marshmallow mixture well and mix in 6 cups of your lucky charms cereal (using a long metal spoon is the best bet for mixing).
4. Scoop your cereal mixture into your greased baking dish and press your cereal mixture into your pan evenly (I like to grease a plastic bag or a potato masher and press it into the pan).

5. Press about 40-50 marshmallow clovers lightly onto the top of the bars.
6. Freeze for 20 minutes and slice into bars.

    Our family loves Rice Krispie Treats! We used to make them a lot until they went on the market already made. The grandkids love Lucky Charms – they are magically delicious! What a great treat putting them both together! My grandkids have actually eaten all the marshmallows out of the box and left the cereal!
