Cranberry Cream Cheese Muffins

Cranberry Cream Cheese Muffins are one of our go to breakfast meals here at the LWH household. They are easy to make ahead and handy to grab as we run out the door on our way to work. I love that the cranberry-orange flavor compliments the cranberries and the cream cheese making them one of our favorite muffins to have on hand.
1 3 ounce package of cream cheese softened
4 Tablespoons sugar divided
1 package cranberry-orange quick bread
1 cup milk
1/3 cup vegetable oil
1 egg
In a small bowl, cream cheese and 2 tablespoons sugar until smooth. Set aside.
Place the bread mix into another bowl, combine milk, oil and egg stir into bread mix until moistened. Fill muffin liners 1/4 full of batter. Place 2 teaspoons of cream cheese mixture in the center of each. Top with remaining batter. Sprinkle with remaining sugar.
Bake at 400 degrees 18-20 minutes.
