Festive Fruit Pizza

Festive Fruit Pizza is a perfect way to turn an ordinary fruit pizza into a Fourth of July festive dessert. My Aunt Judy has been gone for a lot of years but while trying to decide what recipe to make festive, she came to mind. So instead of following the “original” recipe I modified it just a little bit to make it a Festive Fruit Pizza in honor of the Fourth of July holiday!
So for this fruit pizza I simply modified it by making things a little easier on me! I used fresh blueberries and fresh strawberries, two containers of whipped cream (store brand I’m sure.) As well as a 2 rolls of refrigerated sugar cookie dough that I flattened into the smallest sheet pan I own then baked according to the package directions. While it was baking I sliced up the strawberries and washed the blueberries. I quickly dried the blueberries, but the strawberries I had previously washed so they were ready to be cut up.
Then I let the sheet of cookies cool, then spread the whipped topping over the top. Then I made a flag as you see I did use 50 berries, but didn’t get enough stripes on it for it to be considered a real flag. But the end result was a delicious and patriotic dessert fit for any Fourth of July gathering.

Fruit Pizza by Judy Brittian
1 refrigerated sugar cookie dough. Bake as directions on package on a 12 inch pizza pan.
Fruit she used:
- peaches–sliced
- mandarin oranges
- bananas–dipped in lemon juice so they don’t brown
- pears–sliced
- grapes–cut into halves
- kiwi–sliced
- maraschino cherries–cut into halves
Keep 1 1/2-2 cups fruit juice when draining fruit. After fruit has drained place on paper town to drain more. (Otherwise your fruit pizza gets soggy.)
On top of baked cookie dough spread 1 c powdered sugar and 8 ounces of cream cheese after you mix it together.
Place fruit on top of cheese spread with fruit juice add 2-4 T corn starch and cook until thick. Add 1 large serving spoon of apricot preserves when cooled, spread some on top of fruit.
(I don’t always use apricot preserves).
