Happy Donut Day as well as Hazelnut Cake Day!! Making a hazelnut cake is a great way to spend this food holiday!
Over 95% of Hazelnuts come from Oregon’s Willamette Valley which is impressive to say the least when it comes to US production. 70% of the world’s production comes from Turkey, but I’m proud to say we don’t have to have very many imported!! Hazelnuts are rich in Vitamin E as well as protein and fiber. Hazelnuts are also believed to be one of the highest natural sources of antioxidants!
The Hazelnut grows on a tree and is ready to harvest in the spring because the tree pollinates and blooms in the middle of winter.
The recipe below is adapted from a Blackberry Jam Cake recipe that is delicious, but using hazelnut spread is a great way to enjoy it on today’s food holiday.
