Meatball Soup Recipe
A few months ago ( a year ago) my Sister-in-Law Sara had her first baby and when we asked her what she wanted us to give her, she told us freezer meals. At first I was a little more than worried because I wasn’t sure I would be able to pull it off, but with a little bit of help from Mr. SMSL we were able to deliver. We ended up making seven family size meals so that way they had one for a dinner and then they could eat leftovers for lunch the next day. So the first thing we did, was make up a menu.
So as you can see they had several yummy choices and some of the recipes could be used for other meals. So we bought disposable pans, and got to work on the freezer meals!! It only took 3 hours from start to finish if you don’t include Cooling time, but since they went straight to the freezer it wasn’t a big deal for us!

Sweet N Sour Meatballs over Rice
Meatball Soup is easy to make as well as delicious so we knew it was a must add to our freezer meal collection. This meal ended up being one of Sara’s favorites because it was unlike anything she had ever had before. When I had made the meatballs (recipe found here) it was already half way done.
I chopped up a handful of baby carrots, a small onion and placed them into our big soup pan. Then I did a couple stalks of celery and added 2 cans of beef broth into the mix. (I had homemade stock in the freezer I used, but cans are fine.) 1 can of diced tomatoes flavored with seasoning or plain it’s your pick. Salt and Pepper for seasoning to taste
Then, I got them boiling and put in bowtie pasta to make it a more fun meal. But you can use rotini, spaghetti or any kind of noodle you have on hand.
I cooked them all together until they were al dente, mixed in the meatballs and placed it into my freezer pan. Then let it cool before placing it into the freezer. When it was time to cook it all Sara had to do was place it into the oven at 350ºF for about 20 minutes or until heated through.
Serve with crackers or garlic bread if you would like. But at our house we just eat the spaghetti soup as a full meal.

Our favorite restaurant in town has a great meatball soup – I’m always trying to replicate it. I think I’ll try this next 🙂
