Mint Chocolate Treats
Sometimes in life things change when you aren’t ready for those big life changes. But one thing I’ve learned through my 40+ years is to just go with the changes and focus on things that I do have control of. I’m not perfect by any means and you find out who is really there for you as your challenges change almost daily. However, the one thing that remains the same is that family is there for you no matter what. Hug your little guys a little tighter, do less than you should and take time to enjoy life.
The little guys aren’t little for long and before you know it, you will have an empty nest. While having an empty nest is tough and something I never thought I would have it has taught me a few things about myself. I’m stronger than I realize and that the time you have goes faster than you ever thought possible. So this week as many parents experienced the first day back to school, I experienced the first of many I would no longer be having. So we celebrated with Mint Chocolate Treats instead, sounds reasonable right?
Enjoy the back to school time while you have it because before long the empty nest will be here and you will have to learn to live (in a different way) all over again.
5 Cups Crispy Rice cereal
3 Tablespoons softened butter
1-10oz Bag marshmallows
1 Teaspoons peppermint extract
Green gel food coloring
12oz Ghirardelli dark chocolate melting wafers
Directions-
1. In a large bowl, heat your marshmallows and butter for about 1-2 minutes
2. Mix in a few drops of green food coloring and your mint extract
3. Now mix in your Rice Krispie cereal
4. Press into your 8×8 baking pan
5. Set in the freezer for 30 minutes
6. Melt your dark chocolate wafers in a microwave safe bowl on 50% power for 3-4 minutes, stirring every 30 seconds until melted
7. Pour your chocolate over your Rice Krispies and spread evenly
8. Place back in the freezer for an additional 15 minutes until the chocolate is hardened

I know what you mean about the empty nest!! I was lost & lonely – trying to find things to keep me busy!! My grown children blessed me with 15 grandkids, but even they have grown up so fast! My oldest two grandchildren are 20 & 18 years old! I’ve done some baking with all of them. We loved it! I pinned this fantastic recipe so I have a new food item they can help me bake with!
