Pizza Tortillas Are the Perfect Quick Weeknight Meal

One of the toughest things about being an “empty nest” family of two is no longer cooking for a family. I know that it doesn’t sound that bad but cooking for three is easier than cooking for two. So I’ve been trying to come up with new recipes of the “classics” in an effort to save us the mounds of leftovers and of course a few added pounds. You know that I’m a member of the clean your plate club (because there are starvingĀ children in the world)…while that is true I haven’t broken all of the bad habits I’ve learned over the years. But I do try to support those charities to help feed hungry kids even here in the United States.

While that is a story in and of itself today we are going to talk about these yummy Pizza Tortillas.

Pizza Tortillas


Ingredients –

flour tortillas

pizza sauce

mozzarella cheese

pepperoni

Directions –

Heat a large pan or a griddle on medium heat.

Pizza Tortillas

Place the tortillas on the griddle and let them heat through.

Add pizza sauce, cheese and pepperoni (and whatever else toppings you would like) to one side of the tortillas.

Allow the cheese to begin melting and then carefully fold the tortilla in half.

Let brown a few more minutes and then flip.

Remove the quesadilla from the griddle once the cheese has melted and it is heated through. If you don’t have an electric griddle you can cook them on the stove, either way works just fine. Try these yummy Pizza Tortillas out for dinner soon and be sure and let me know how they turned out!

I liked them a lot! Quick, easy and delicious. These would be even better with Italian sausage and mushrooms.
One warning- careful when you flip them, because the pizza sauce can splatter. Wear an old shirt or a cover-up.
