Pot Of Gold Cookies
As you all know March is a fun month for our household because it’s my birthday, followed by my brother-in-laws (the next day!) Then we skip to March 17th and celebrate our daughter’s birthday, and the next day is a nieces birthday.
So we celebrate lots of wonderful things and then on the first day of Spring we celebrate that arrival, but also the loss of one of our younger family members that was taken at the age of 4. (We might get into that another day), but I want to encourage each and everyone of you to enjoy everyday of your life. Keep going even when it’s tough, but remember that you are good enough and whip up a batch of these St. Patrick’s Day Cookies to make your day brighter.
To whip up these delicious Pot of Gold Cookies you will need the following ingredients.
Oreos (any)
Wilton green candy melts
Rolos
Vanilla frosting
Green sprinkles
St. Patrick’s Day sprinkles
Airhead Extreme’s
Then you are going to want to prepare your workspace by laying out a piece of parchment paper. And then following the next few steps. In a microwave safe bowl heat your green candy melts on 50% power for 3-4 minutes, stirring every 30 seconds until melted. Stir and place an Oreo into the chocolate making sure all sides are covered.
Remove with a slotted spoon and shake off any excess chocolate.
Set on the parchment paper.
Cut a 1.5” piece of airhead extreme and place it on the top left of the green Oreos.
Open the Rolos and add a dollop or frosting to the bottom side.
Cover the frosting in gold sprinkles and set next to the Airhead Extreme. Top with St. Patrick’s sprinkles and let set.
Then, you are ready to continue the process so you have enough of this Pot Of Gold Cookies for your classroom parties, or after school snacks. No matter what the occasion is, these will be the perfect Saint Patrick’s Day Treats, even if you are just celebrating finding the rainbow in your life. Happy Cooking!
