Roasted Chicken with Potatoes and Green Beans
few months ago (almost a year) my Sister-in-Law Sara had her first baby and when we asked her what she wanted us to give her, she told us freezer meals. At first I was a little more than worried because I wasn’t sure I would be able to pull it off, but with a little bit of help from Mr. SMSL we were able to deliver. We ended up making seven family size meals so that way they had one for a dinner and then they could eat leftovers for lunch the next day. So the first thing we did, was make up a menu.
So as you can see they had several yummy choices and some of the recipes could be used for other meals. So we bought disposable pans, and got to work on the freezer meals!! It only took 3 hours from start to finish if you don’t include cooling time, but since they went straight to the freezer it wasn’t a big deal for us!

For the Roasted Chicken with Potatoes and Fresh Green Beans we used a chicken quarter we had in the fridge. We just used some Extra Virgin Olive Oil on it, rubbed it in, and then seasoned it with a mixture of salt and pepper as well as garlic and lemon pepper. We even added a little bit of our favorite seasoning to the green beans/potatoes for an added flavor burst. Then we put it in the oven to bake it for about 30 minutes at 350° F. Then we partially cooked the potatoes as well as green beans until they were also about half done.
Then we placed them into the throw away aluminum pan so that way Sara could easily cook them when it was time for that meal. Since the chicken was already cooked and the potatoes/green beans were half cooked it only needed to be cooked for less than 30 minutes. Then we put the lid on it and popped it into the freezer.
