Rocky Road Day

Rocky Road Day is celebrated each year on June 2nd!! This is a delicious treat made with marshmallows, chocolate and of course nuts. But I do have to admit that my favorite way to enjoy Rocky Road is in ice cream. But of course I couldn’t just run into town and buy ice cream, I decided I needed to make a Rocky Road ice cream pie. It was easy to get all of the ingredients and some items I had on hand, but I was happy with the finished product.

The above picture was a brownie mix with marshmallows, almonds for the nuts and chocolate pieces melted in for more chocolate! Easy to mix together and of course cut into squares for a quick on the go snack perfect for picnics.
