Saint Patricks Day Cupcakes

Saint Patrick’s Day Cupcakes

 
When we found out that we were pregnant with our daughter Elizabeth her official due date was March 19. But instead of making it to that date, I went into labor in the evening of March 16th and started praying that she was born that day and NOT on Saint Patrick’s Day. Everything was progressing well until my water broke and that is when things went south quickly. Her heartbeat started dropping, and the Doctors and nurses started scrambling around. It was quickly determined that she was breech and that they would be performing an emergency c-section. I told them to hurry because she had to be born by midnight because I didn’t want her to be a Saint Patrick’s Day baby but she, the doctors and of course God had something else in mind. By the time the team got there and was ready it was well after midnight and I had to face the music that she would in fact be a Saint Patrick’s Day baby whether I liked it or not.
 
Saint Patricks Day Cupcakes
Through the years I still didn’t really “love” that she was born on a holiday, but have come to love the fact because it meant super fun holiday parties and of course her love of green foods was never hidden. If I had a dollar for every birthday that I made green cupcakes, I would be a rich woman. Some years they did look better than others but they were always delicious regardless of how they looked.
Ingredients: 

1 C. granulated sugar
1/2 C. butter, melted
2 eggs
2 tsp. vanilla extract
1 1/2 C. flour
2 tsp. baking powder
1/2 C. milk

disposable piping bag
Star round frosting tip  (this is the set I have and I use a re-usable piping bag)
St. Patty’s Day sticks (I purchased mine at the Dollar store)
toothpicks
 
Saint Patricks Day Cupcakes

Directions: 

Preheat the oven to 350 degrees and line a 12 count muffin tin with green cupcake liners.
Combine the granulated sugar, melted butter, eggs, vanilla extract, flour, baking powder and milk.
Scoop the cupcake batter into the muffin tins filling each about 3/4 full.
Bake 20-25 minutes.
Remove from the oven and let cool.
Attach the frosting tip to the disposable piping bag and fill with green frosting.
Gently squeeze the frosting out of the bag and onto each cupcake in a circular motion going around the top of the cupcake.
Repeat with each cupcake.

 

Take 2 St. Patty’s day sticks and affix to the top of each toothpick, front and back.
Place the toothpicks into the cupcakes.

Frosting Ingredients: 
 
3 C. powdered sugar

 

1-2 tbsp. milk
1/3 C. butter, melted
1 tsp. vanilla extract
Green food coloring
 
Directions: 
 

Using a hand held mixer, combine the powdered sugar, melted butter, vanilla extract and milk. Add green food coloring to the frosting.
