Shrimp Alfredo the Nutritious Way

Shrimp Alfredo the Nutritious Way–And you are all thinking alfredo, shrimp and nutritious can’t be in the same sentence because it won’t happen. I’m here to tell you, it did happen, it was amazing, nutritious and easy to make!! We all know I’m not a molly  home maker type girl and the standard answer around here, is easy!! So you know if I’m making it, it has to be easy.

I had saw a recipe somewhere for something like this with chicken, but we had chicken yesterday so I didn’t want it today. So I decided I would use shrimp instead (best decision ever.) We all love pasta but sometimes you just have to get creative on how to fix it, and make it lower calorie, I hit a home run with this one folks!! Check out the finished product!!

Shrimp Alfredo the Nutritious Way

Here’s what I did!! Cooked the penne pasta until done, sprayed my pan with non stick cooking spray and dumped it in. Then I cut up my shrimp into bite sizes pieces that I thawed out in warm water. Then put the spinach on top of the noodles/shrimp mixtures. I used about a cup of spinach, give or take and I took off most of the stems and made the pieces a little “smaller”. Then I took the mushrooms, drained them, cut up 4 green onions, and opened a can of tomatoes. I also put a little garlic powder into the mix, but didn’t measure it, I just eyeballed it.

I put that on the stove till it was hot, then added half a jar of Alfredo sauce. I used lower calorie Ragu and no one noticed. Then mixed it all together let it cook until boiling, and then poured over my pasta. Then I spread my cheese over it, and then popped it into the over for about 30 minutes at 350°. Maybe less, I just wanted it to “look” good so I kept checking it.
