Shrimp Scampi Day
Shrimp Scampi is a fabulous dish of shrimp sauteed in butter, garlic, and white wine. It is tossed with parsley and served over either pasta or rice. If you are watching your carbohydrate intake, you can skip the pasta or rice altogether and still have a great tasty meal! Shrimp Scampi is super fast and easy to make and it is highly versatile! It is a wonderful special occasion dish, as well as an easy week night meal. If you need a little energy, this dish is perfect because the shrimp are packed with protein and zinc to give you a fantastic energy boost! I usually cook ours in a couple teaspoons of butter, a teaspoon of olive oil and with fresh garlic. Then add red pepper flakes, salt and pepper as desired and then of course a half of a cup of wine. We leave out the pasta so we don’t have the carbs! 🙂 But my favorite place for Shrimp Scampi is Red Lobster! How about you?
