Growing up in Missouri we had a local Amish community and let me tell you, the homemade Whoopie Pies were to die for. While I don’t eat them nearly as often as I used to, they are a delicious treat when we go to Jamesport for a treat. But now instead of making the drive, we just whip them, but in March we are all about St. Patrick’s Day!
Why you ask? Because our daughter was born on St. Patrick’s Day way back in 1998. While I hated the fact that she shared her birthday with a holiday, it has been fun to watch her embrace it as she has grown older. Now we will enjoy spending time with her and her little family, and keep the tradition alive of all things “green”.
Ingredients needed for the cake:
St. Patrick’s Day Whoopie Pies Recipe
Vanilla cake mix + all the ingredients to make it
1 tbsp cocoa powder
¼ tsp Kelly green gel food coloring
Ingredients for buttercream filling:
½ stick butter, softened
1 cup icing sugar
2-3 tbsp milk
Tools needed:
Rectangular pan (13 x 9)
Parchment paper
4 leaf clover cookie cutter
Yields: 6 to 8 whoopie pies
Line your baking sheet with parchment paper and preheat your oven according to the cake mix’s directions.
Start mixing your cake mix and its ingredients. Once the cake batter has formed, add cocoa powder and mix until completely incorporated.
Add gel food coloring and mix until tinted the swirls are part of the process of these fun St. Patrick’s Day Whoopie Pie dessert.
Using a spatula, spread your cake batter onto your lined baking sheet. Bake according to the box’s directions.
To make the buttercream, beat together butter, sugar and milk on medium speed. Gradually increase the speed to high.
Once the ingredients are combined and form semi-stiff peaks, scoop into a piping bag.
Remove cake from oven and allow to cool. Using your cookie cutter, cut out 4-leaf clover shapes and save the scraps for snacking! If you are lucky enough to have scraps leftover after you make the cookies throw some whipped cream on it and have a dessert to go with your dessert. (I’m all about dessert!)
Flip over each shaped cake (they look better from the underside and are easier to frost this way).
Frost half of your shaped cakes and then sandwich with another unfrosted piece.
