Strawberry Cake Cookies
Sometimes I have a bit of a sweet tooth and get into the kitchen to get my baking on. But since the beginning of the year we have been trying to eat healthier, watch our calories and cut the clutter. I know it’s a weird combination but so far it’s been worth it for us. But sometimes you have to try something new to you and see how delicious it really is. That is where the recipe for Strawberry Cake Mix Cookies comes into play. Strawberry Cake Cookies is probably one of the easiest cookie recipes I’ve ever tried. It takes literally 3 ingredients all of which allowed me to “cut clutter”, by getting it out of the pantry. Then we had the nieces over to help eat the cookies so I didn’t eat all of them myself which allowed me to be in control of the calories.
Now, I have seen this recipe floating around everywhere on the Internet but I had to try it myself to see just how good they really were. I loved that they took only 3 ingredients, were ready to go in under 20 minutes and are versatile enough for toppings, icing, or even plain.
Strawberry Cake Mix
2 Eggs (however many your mix calls for)
1/3 cup oil
That’s it, that’s all. Mix all together using a mixer, and then form into balls placing them about 1 inch apart on a cookie sheet.
Bake at 375ยบ F for six to eight minutes depending on your oven, and pull out and cool on a rack or waxed paper.
When they are Cooling, you can add your chocolate hearts, conversation gummies, or other topping of choice. I think even a can of store bought frosting would be delicious, but the truth be told I enjoyed them warm right out of the oven.
