Summer Meal Ideas (That don't heat up the kitchen)

Summer is on its way full force. This means using your oven and heating up your kitchen is to be avoided at all costs. Our family tends to eat out during summer just to avoid a hot house, but here are some summer meal ideas that don’t heat up your kitchen:

Tomato Sandwiches: Have you ever heard of these? I didn’t until we went down South. They may not sound the best, but they are amazing. Slice up tomatoes and add a little seasoning salt to each side. Put some bread in the toaster then add the mayo and tomatoes. Presto you have a tasty tomato sandwich. Add some chips or potato salad or cottage cheese as a side dish. 

Grilled Kabobs: Even when you’re cooking outside, it can seem to heat up the whole house going in and out. Kabobs don’t take long to grill and are a tasty meal for everyone. You can do sliced steak with cucumbers, potatoes, and zucchini on a skewer for an all in one meal. Throw on some corn on the cob for a real summer treat.

Salad in a Jar: There is really not much you can’t add to lettuce, spinach leaves, or cabbage to make a yummy summer meal. Get a mason jar for each member of the family. Cut up various veggies of choice: celery, cucumber, tomatoes, or carrots. Put out some nuts, black beans, or other protein rich salad toppers. Don’t forget the croutons, cheese, and salad dressing. Let everyone add their own salad choices to their jar starting with the dressing and hard stuff first and ending with the lettuce. Then dump your jar into a bowl for a perfectly delicious salad.

Grilled Quesadilla: These are a family favorite at my house. Simply add some shredded cheese, ripped up sandwich meat, and a dash of hot sauce onto a tortilla. Put another tortilla on top, wrap in tin foil, and place on the grill until the cheese melts. You can, also, make them in the microwave.

Berry and Baby Green Salad

When it gets hot, don’t spend money eating out; get creative with what you have. One  of our favorites is the Berry & Baby Greens Salad found below.

    I love summers here in Qz….and I love refreshing cool meals….the Berry & Baby Greens Salad looks a treat and I see it debuting on our table this Christmas….if not earlier

    These Are all great ideas! I hate cooking to begin with but in the heat of the summer it’s worse. It just gets way too hot in the kitchen. I appreciate all the tips and suggestions I can get! 🙂

    Hi Heidi,
    That salad looks delicious. Here in Ca we have a lot of hot days and I always eat salads or sandwiches. I hate to turn the oven on. Im going to have to try this salad. Thanks for sharing 🙂

    I like the berry and salad greens – finding that especially in the summer with fruit so plentiful it is nice to have these combination salads.

    I love this berry and greens salad, it is just so perfect. It is getting too hot to cook, I’ve been cooking in the evening, when it is cooler, for the next day, but these are good ideas.
