Zucchini Fritters Recipe
Every year we have an endless supply of Zucchini, I’m not complaining, I have just had to get creative over the last few years. I always freeze some zucchini so we can enjoy it in different dishes through out the year. But our all time favorite zucchini recipe is for Zucchini Fritters! We came across this recipe at our favorite Amish Roadside Stand–Clear Creek Produce in Jamesport, Missouri. Closed of course on Sunday’s but any other day of the week you are greeted by kids of all ages and a very friendly family. If they aren’t there, they work on the honor system with a scale and can for you to leave your money after you write down what you took. That’s one of the best things about where I live, places like that can still be found.
2 cups shredded zucchini
1 cup shredded carrots
1 c. white cracker crumbs (I use whole wheat crackers to make it a little healthier)
1 heaping Teaspon flour
1/2 teaspoon Seasoning salt (McCormicks, Lawry’s, **whatever is cheapest at the time)
1/4 teaspoon garlic salt (I use powder)
1 small oniion, chopped
Add salt and pepper to taste. Stir all ingredients together and fry in 1/2 inch oil. (I use less because of the pan I use)
Sprinkle with cheese(optional**I’ve never done that)
We eat them as side dishes and on those hot summer days we eat zucchini fritters with tomato and onion slices just like you would a hamburger/cheeseburger!!
