Wheat Penne Soup
Rachel Ray has some amazing recipes and through the years I’ve always made them to enjoy. But since I’ve been eating healthier that also means my family does as well. But some of the old tried and true recipes have to be reworked to make them work for us. Today has been rainy and my husband wanted Rachel Ray’s Spaghetti Stoup. But I decided I could make a healthier version so off to the kitchen I went.
First up Turkey Meatballs. 1 pound of ground turkey, 2 green onions chopped up and thrown into the meat. Then I used about a quarter of a cup of bread crumbs. Salt, Pepper, and Garlic Powder and shaped into balls. Cook them till golden brown in the oven, drain what little fat there is and set to the side.
I put 3 cans of broth (I used 1 chicken, 2 beef) in the pan with 3 cans of water. 1 Can of Rotel, 1 Tablespoons of Jalapeno’s 1 cup of chopped carrots, 1 cup of celery chopped up, 1 medium onion chopped up, 6 ounces of Wheat Penne Pasta. 1 box of fresh mushrooms, chopped up and 1 bag of fresh sugar snap peas.
I cooked the carrots, celery, onion, jalapeno’s and pasta for awhile first. Then at the end I added the snap peas so they were still crunchy and the mushrooms were added at the same time. When it was time to serve the soup we added the turkey meatballs into the soup bowls. Then we topped it with a few green onions just for a little bit of color. The soup was delicious!! After I added the ingredients to the recipe builder tool, I realized it was a little high on sodium so I suggest checking your broth labels before you make it. I will definitely be more observant when it comes to sodium!!
