Zucchini Fries Recipe

Zucchini is a plant that is ever producing plant in the summer and once you get a good plant going you have lots of zucchini to use. While strolling through Pinterest one night I saw a recipe for zucchini fries but quickly decided it looked good but had to many unhealthy things in it, so I would try my own version.
I sliced my zucchini into quarters as you see on the left. On the right I had egg, a splash of skim milk, salt, pepper, garlic and onion powder to taste. I even left the skins on them for more of the nutrients stayed in the zucchini.
On the right I used bread crumbs that were in the cabinet through in a little pepper and a little bit of Italian seasoning. I put the zucchini sticks into the egg mixture then put it into the bread crumbs and put them into the pan on the right. Super quick and super easy.
Finished product, with a few notes. Don’t cook as many as I did, they aren’t good leftover. Less bread crumbs would also make them better as well but they were still delicious!! Thank goodness for another Pinterest find made over, I wish I could have Zucchini all year around!!
